PICKLED RADISHES AND WILD GARLIC PESTO - April 2021 - Katharina

PICKLED RADISHES

Ingredients:
  • radishes
  • onion
  • garlic
  • 200 ml apple vinegar
  • 200 ml water
  • 2-3 tbsp. sweetener
  • 2 tsp. salt 
  • spices: pepper, mustard seeds, coriander seeds, bay leaves, cloves
Instructions:
  1. Wash and finely slice radishes and onions. Put them into a jar.
  2. In a pot, whisk together the apple vinegar, water, sweetener and salt. Bring the mixture to a boil. Add the spices and simmer for about 15 minutes. 
  3. Pour the brine into the jar over the radishes. Set aside and let the mixture and radishes cool to about room temperature. 
  4. Close them with a lit and refrigerate them for about 2-5 days.

WILD GARLIC PESTO

Ingredients:
  • 200 gr wild garlic
  • 3-4 tbsp. roasted sunflower seeds
  • 2-4 tbsp. oil
  • 1-2 tbsp. apple vinegar
  • salt
Instructions:
  1. Wash, dry and cut wild garlic into small pieces.
  2. Put all ingredients into a food processor and mix until it has a smooth texture.
Tip: Replace the sunflower seeds with walnuts or hazelnuts.
