PUMPKIN SOUP - Katharina - October 2021

INGREDIENTS:
  • 1-2 butternut squashes
  • 2-3 onions 
  • 2-3 cloves garlic 
  • 2 tbsp. coconut oil
  • vegetable broth
  • spices: curry powder, cumin, smoked paprika 
  • salt and pepper 

INSTRUCTIONS:
  1. Peel, core and chop the butternut squash. Dice onions and mince garlic. 
  2. Heat a pot with oil. Add the onions and garlic and sauté until translucent. 
  3. Add the butternut, vegetable broth and spices. Cook until the butternut is tender.
  4. Use a blender to create a creamy soup Serve it with some fresh flatbread.
