TOMATO SOUP WITH GARLIC BREAD - Katharina - August 2021

INGREDIENTS:
  • 1 kg ripe tomtoe
  • 2-3 onions
  • 7-8 cloves garlic
  • oil
  • 1 tsp. thyme
  • 170 ml vegetable broth
  • salt and pepper
  • sliced bread

INSTRUCTIONS:
  1. Preheat the oven to 200 degrees celsius.
  2. Cut the onions into large pieces. Mince five cloves of garlic, three cloves leave completely.
  3. Spread the tomatoes, onions, garlic cloves and dried thyme on a baking sheet.
  4. Drizzle tomatoes with oil and season generously with salt and pepper.
  5. Roast the veggies for 35 to 40 minutes until the tomatoes have shriveled and the garlic and onions are golden brown.
  6. Transfer the roasted veggies to a blender. Add vegetable broth and another pinch of salt and pepper.
  7. Blend the soup until smooth. Put it into a pot and keep warm on the stove, while preparing the garlic bread.
  8. Mix 3 tbsp. oil with minced garlic and some salt.
  9. Spread the mixture onto sliced bread. Place them on a baking sheet an bake until crunchy and golden brown.
